🧂 Ingredients

  • 2 lbs Chicken pieces (legs and thighs)(skinless)
  • 1 1/4 cup Lime juice
  • 3 tablespoons Worcestershire sauce
  • 2 teaspoons Sugar
  • 2 teaspoons Dry mustard powder
  • 1.5 teaspoons Black pepper(freshly ground)
  • 1 teaspoon Turmeric
  • 0.5 teaspoon Cumin
  • 4 cloves Garlic(minced)
  • 1 medium Onion(sliced)
  • to taste Salt
  • 2 tablespoons Vegetable oil
  • 1 medium Red bell pepper(sliced)
  • 1 cup Chicken stock

👨‍🍳 Instructions

  1. 1

In a large bowl, combine chicken pieces, lime juice, Worcestershire sauce, sugar, mustard powder, black pepper, turmeric, cumin, minced garlic, sliced onion, and salt. Mix well to coat the chicken. Cover and marinate in the refrigerator for at least 1 hour.

  2. 2

Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken pieces and cook, turning occasionally, until browned on all sides (about 8 minutes). Remove chicken from skillet and set aside.

  3. 3

Add the onions and red bell pepper from the marinade to the skillet. Cook until softened, stirring occasionally (about 5 minutes).

  4. 4

Return the browned chicken to the skillet along with any accumulated juices. Pour in the chicken stock. Bring the mixture to a boil, then reduce heat to medium, cover, and simmer until the chicken is cooked through and tender (about 15-18 minutes).

  5. 5

Taste and adjust seasoning with salt if needed. Serve hot, typically with white rice.

💡 Pro Tips

  • For deeper flavor, marinate the chicken overnight.
  • Ensure the chicken is cooked through; it should register 165°F (74°C) internally.
  • If you prefer a thicker sauce, you can simmer uncovered for the last few minutes of cooking.

🔄 Variations

  • Add other vegetables like potatoes or carrots along with the onions and bell peppers.
  • For a touch of heat, add a pinch of cayenne pepper to the marinade.
