🧂 Ingredients

  • 500 g Ground beef or lamb(lean, finely ground)
  • 1 medium Onion(finely grated or minced)
  • 50 g Bulgur wheat(fine grind, soaked and squeezed dry)
  • 1 large Egg
  • 1/4 cup Fresh parsley(finely chopped)
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 200 g Walnuts(toasted and finely ground)
  • 3 cloves Garlic(minced)
  • 1/4 cup Cilantro(fresh, chopped)
  • 2 tbsp Pomegranate molasses
  • 1/2 cup Water(or as needed for sauce consistency)
  • 2 tbsp Olive oil

👨‍🍳 Instructions

  1. 1

In a large bowl, combine the ground meat, grated onion, soaked bulgur, egg, chopped parsley, salt, and pepper. Knead the mixture thoroughly with your hands until it becomes very smooth and cohesive, about 5-7 minutes. This is crucial for the texture of the Kyufta.

  2. 2

Divide the meat mixture into equal portions and shape them into smooth, round meatballs. You can make a slight indentation in the center of each meatball if desired.

  3. 3

Bring a large pot of lightly salted water to a gentle simmer. Carefully add the shaped Kyufta to the simmering water. Cook for about 15-20 minutes, or until the Kyufta float to the surface and are cooked through.

  4. 4

While the Kyufta are cooking, prepare the walnut sauce. In a bowl, combine the finely ground walnuts, minced garlic, chopped cilantro, pomegranate molasses, and olive oil. Gradually add water, mixing until you achieve a smooth, pourable sauce consistency.

  5. 5

Once the Kyufta are cooked, carefully remove them from the water using a slotted spoon. Arrange the Kyufta on a serving platter.

  6. 6

Pour the walnut sauce generously over the Kyufta. Serve immediately.

💡 Pro Tips

  • Ensure the meat mixture is kneaded thoroughly for the best texture.
  • The consistency of the walnut sauce can be adjusted with more or less water.
  • For a richer flavor, use a mix of beef and lamb.

🔄 Variations

  • Add a pinch of cinnamon or nutmeg to the meat mixture.
  • Serve with a side of plain yogurt or a fresh green salad.
