- 1 lb Pork shoulder(cut into 1-inch cubes)
- 2 large Ripe plantains(peeled and sliced into 1/2-inch rounds)
- 2 cups Long-grain white rice
- 4 cups Chicken broth
- 1 medium Onion(chopped)
- 1 medium Bell pepper(any color, chopped)
- 3 cloves Garlic(minced)
- 0.5 cup Tomato sauce
- 1 tsp Achiote powder or paste(for color)
- 1.5 tsp Salt(or to taste)
- 0.5 tsp Black pepper(or to taste)
- 3 tbsp Vegetable oil
- 0.25 cup Fresh cilantro(chopped, for garnish)

In a large pot or Dutch oven, heat 2 tbsp of vegetable oil over medium-high heat. Brown the pork cubes on all sides. Remove pork and set aside.
