Arroz con Pollo y Guisantes

- 1.5 lb Chicken thighs(bone-in, skin-on, cut into serving pieces)
- 2 tbsp Olive oil
- 1 tbsp Achiote oil (or annatto powder)
- 3 tbsp Sofrito
- 4 oz Tomato sauce
- 1 packet Sazón con culantro y achiote
- 1 tsp Adobo seasoning
- 0.5 tsp Garlic powder
- 0.5 tsp Oregano
- 1 large Bay leaf
- 3 cups Chicken broth
- 2 cups Medium-grain rice(rinsed)
- 1 cup Green peas(frozen or fresh)
- 0.25 cup Pimento-stuffed green olives(sliced)
- 2 tbsp Cilantro(chopped, for garnish)

Season chicken pieces generously with adobo, garlic powder, and oregano.

Heat olive oil and achiote oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

Sear chicken pieces until golden brown on all sides. Remove chicken and set aside.
