Bosanski Kljukuša sa Jabukama - Bosnia and Herzegovina traditional dish

🧂 Ingredients

  • 4 large Granny Smith apples(peeled, cored, and grated)
  • 1.5 cups All-purpose flour(about 200g)
  • 0.5 cup Sugar(about 100g, adjust to taste)
  • 1 packet Vanilla sugar(or 1 tsp vanilla extract)
  • 1 tsp Cinnamon
  • 3 large Eggs
  • 0.5 cup Milk(about 120ml)
  • 0.5 cup Vegetable oil(about 120ml, plus more for greasing)
  • 1 tbsp Baking powder
  • 1 pinch Salt
  • for dusting Powdered sugar

👨‍🍳 Instructions

  1. 1

Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan or a similar-sized round pan.

  2. 2

In a large bowl, whisk together eggs and sugar until pale and fluffy. Add vanilla sugar (or extract), milk, oil, and salt. Whisk to combine.

  3. 3

In a separate bowl, combine flour and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

  4. 4

Pour about 3/4 of the batter into the prepared baking pan and spread evenly.

  5. 5

In a bowl, combine the grated apples, cinnamon, and 1-3 tablespoons of sugar (adjust to your preference and the sweetness of the apples). Mix well.

  6. 6

Spoon the apple mixture evenly over the batter in the pan. If the apples have released a lot of juice, you can add 1-3 tablespoons of ground Plazma keks or similar biscuits to absorb some of the excess liquid.

  7. 7

Pour the remaining batter over the apple layer, spreading it gently to cover.

  8. 8

Bake for 40-45 minutes, or until a toothpick inserted into the cake comes out clean and the top is golden brown.

  9. 9

Let the cake cool in the pan for about 10-15 minutes before inverting it onto a wire rack to cool completely. Dust with powdered sugar before serving.

💡 Pro Tips

  • Using a combination of tart and sweet apples will give the best flavor.
  • Ensure apples are well-drained if they are very juicy to prevent a soggy cake.
  • This cake is delicious served warm or at room temperature.

🔄 Variations

  • Add a handful of chopped walnuts or raisins to the apple filling.
  • Serve with a dollop of whipped cream or a scoop of vanilla ice cream.
