Bosanski Pilav sa Povrćem (Bosnian Rice Pilaf with Vegetables) - Bosnia and Herzegovina traditional dish

🧂 Ingredients

  • 3 tbsp Olive oil
  • 1 large Onion(finely chopped)
  • 2 medium Carrots(diced)
  • 1 medium Bell pepper(any color, chopped)
  • 3 cloves Garlic(minced)
  • 1.5 cups Rice(long-grain)
  • 3 cups Chicken broth(or water)
  • 2 tbsp Tomato paste
  • 1 tsp Paprika
  • to taste Salt
  • to taste Black pepper
  • 2 tbsp Parsley(fresh, chopped, for garnish)

👨‍🍳 Instructions

  1. 1

Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5 minutes.

  2. 2

Add diced carrots and chopped bell pepper to the pot. Cook for another 5-7 minutes until slightly tender.

  3. 3

Stir in minced garlic and cook for 1 minute until fragrant.

  4. 4

Add the rice to the pot and stir for 1-2 minutes to toast it lightly.

  5. 5

Pour in the chicken broth (or water) and stir in the tomato paste, paprika, salt, and pepper. Bring to a boil.

  6. 6

Once boiling, reduce heat to low, cover the pot tightly, and simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed.

  7. 7

Let the pilaf rest, covered, for 5-10 minutes off the heat. Fluff with a fork and garnish with fresh chopped parsley before serving.

💡 Pro Tips

  • For extra flavor, you can add other vegetables like peas, corn, or zucchini.
  • Ensure the lid is tightly sealed to allow the rice to steam properly.
  • Vegeta, a popular all-purpose seasoning in the Balkans, can be used instead of salt and pepper for a more authentic flavor.

🔄 Variations

  • Add cooked chicken or beef for a heartier meal.
  • Incorporate a pinch of turmeric for a vibrant yellow color and subtle flavor.
