Botswana Lamb Curry

- 2 pounds Lamb stew meat(bone-in, cut into chunks)
- 0.25 cup Cooking oil
- 1 large Onion(chopped)
- 4 cloves Garlic(crushed)
- 2 teaspoons Ginger(minced)
- 2 teaspoons Thyme(minced)
- 1 tablespoon Tomato paste
- 2.5 tablespoons Curry powder
- 1.5 teaspoons Ground coriander
- 1.5 teaspoons Cumin
- 1 tablespoon Beef bouillon powder(optional)
- 2 cups Beef stock
- 2 cups Water
- 1.5 pounds Potatoes(small, quartered)
- Salt(to taste)
- Black pepper(to taste)
- Parsley(for garnish)

Season the lamb meat with salt and pepper. Heat the cooking oil in a large pot or Dutch oven over medium-high heat. In batches, brown the lamb on all sides. Remove the lamb from the pot and set aside.

Lower the heat to medium-low. Add the chopped onion and cook until softened and lightly golden, about 5-7 minutes.

Add the crushed garlic and minced ginger to the pot and cook for 1 minute until fragrant.

Stir in the tomato paste and cook for 2 minutes. Sprinkle in the curry powder, ground coriander, cumin, and beef bouillon powder (if using). Stir well to combine.
