Brochetas de Cerdo con Salsa de Cacahuete - Equatorial Guinea traditional dish

🧂 Ingredients

  • 600 g Pork loin(cut into 1-inch cubes)
  • 150 g Peanut butter(smooth or crunchy)
  • 1 medium Onion(finely chopped)
  • 3 cloves Garlic cloves(minced)
  • 1 tsp Ginger(freshly grated)
  • 3 tbsp Soy sauce
  • 2 tbsp Lime juice
  • 1 tbsp Honey or brown sugar
  • 0.25 tsp Cayenne pepper(or to taste)
  • 1 tbsp Vegetable oil
  • 0.5 cup Water(or as needed for sauce consistency)
  • 8 pieces Wooden skewers(soaked in water for 30 minutes)

👨‍🍳 Instructions

  1. 1

In a bowl, combine the pork cubes with 2 tbsp soy sauce, 1 tbsp lime juice, half of the minced garlic, half of the grated ginger, and half of the cayenne pepper. Marinate for at least 30 minutes (or up to 4 hours in the refrigerator).

  2. 2

While the pork marinates, prepare the peanut sauce. In a saucepan, heat 1 tbsp vegetable oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.

  3. 3

Add the remaining minced garlic and grated ginger to the saucepan. Cook for another minute until fragrant.

  4. 4

Stir in the peanut butter, remaining soy sauce, remaining lime juice, honey or brown sugar, and remaining cayenne pepper. Gradually whisk in water until the sauce reaches your desired consistency. Simmer gently for 5-7 minutes, stirring occasionally. Season with salt if needed.

  5. 5

Thread the marinated pork cubes onto the soaked wooden skewers.

  6. 6

Grill the skewers over medium-high heat (or broil in the oven) for 8-10 minutes, turning occasionally, until the pork is cooked through and slightly charred.

  7. 7

Serve the grilled pork skewers hot, with the peanut sauce on the side for dipping or drizzled over the top.

💡 Pro Tips

  • Soaking the skewers prevents them from burning on the grill.
  • Adjust the amount of cayenne pepper to control the heat level.
  • If the peanut sauce becomes too thick, add a little more water or broth.

🔄 Variations

  • Add chunks of bell pepper and onion to the skewers along with the pork.
  • Use chicken thighs or firm tofu instead of pork.
