  • 3 large Onions(chopped)
  • 400 g Tomatoes(crushed or pureed)

  • 1 teaspoon Coriander
  • 0.5 teaspoon Turmeric
  • 0.25 teaspoon Cayenne pepper(or to taste)
  • to taste Salt
  • to taste Black pepper
  • for garnish Fresh cilantro(chopped)

👨‍🍳 Instructions

  1. 1

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes on all sides. Remove beef and set aside.

  2. 2

Add chopped onions to the pot and sauté until softened and lightly browned.

  3. 3

Stir in minced garlic and grated ginger, cooking for another minute until fragrant.

  4. 4

Add tomato paste and cook for 1-2 minutes, stirring constantly.

  5. 5

Return the browned beef to the pot. Add crushed tomatoes, beef broth, cumin, coriander, turmeric, and cayenne pepper. Season with salt and black pepper.

💡 Tip: Ensure all spices are well distributed.
  6. 6

Bring the stew to a simmer, then reduce heat to low, cover, and cook for 1 hour, stirring occasionally.

  7. 7

Add the yam chunks to the pot. Stir gently to combine. Cover and continue to simmer for another 30-40 minutes, or until the yams are tender and the beef is very tender.

💡 Tip: Avoid over-stirring once yams are added to prevent them from breaking apart.
  8. 8

Taste and adjust seasoning if necessary. Garnish with fresh chopped cilantro before serving.

💡 Tip: Serve hot with rice or millet.

💡 Pro Tips

  • For a deeper flavor, marinate the beef in spices overnight.
  • If the stew becomes too thick, add a little more beef broth or water.
  • Adjust cayenne pepper to your preferred level of heat.

🔄 Variations

  • Add other root vegetables like carrots or sweet potatoes.
  • Incorporate bell peppers for added color and flavor.
  • A splash of lemon juice at the end can brighten the flavors.
