  • 2 cups Millet grains(rinsed)
  • 4 cups Water(plus more if needed)
  • 1 large Onion(chopped)
  • 3 cloves Garlic(minced)
  • 2 tbsp Tomato paste
  • 1 can (14.5 oz) Diced tomatoes(undrained)
  • 2 medium Carrots(peeled and diced)
  • 1 medium Sweet potato(peeled and diced)
  • 1 medium Bell pepper(diced)
  • 3 tbsp Vegetable oil
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1/2 tsp Paprika
  • to taste Salt
  • to taste Black pepper

    Rinse the millet grains thoroughly under cold water. Set aside.

    Heat vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes.
