Cherchem (Millet with Vegetable Sauce)
Cherchem is a hearty and flavorful Mauritanian dish where millet is cooked with a savory vegetable sauce. - 2 cups Millet grains(rinsed)
- 4 cups Water(plus more if needed)
- 1 large Onion(chopped)
- 3 cloves Garlic(minced)
- 2 tbsp Tomato paste
- 1 can (14.5 oz) Diced tomatoes(undrained)
- 2 medium Carrots(peeled and diced)
- 1 medium Sweet potato(peeled and diced)
- 1 medium Bell pepper(diced)
- 3 tbsp Vegetable oil
- 1 tsp Cumin
- 1 tsp Coriander
- 1/2 tsp Paprika
- to taste Salt

Rinse the millet grains thoroughly under cold water. Set aside.

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes.

Stir in the tomato paste, cumin, coriander, and paprika. Cook for 1 minute, stirring constantly.

Add the diced tomatoes (with their juice), carrots, sweet potato, and bell pepper to the pot. Stir to combine.

Add the rinsed millet and 4 cups of water. Season with salt and black pepper. Bring the mixture to a boil.

Reduce the heat to low, cover the pot, and simmer for about 30-40 minutes, or until the millet is tender and has absorbed most of the liquid. Stir occasionally and add more water if the mixture becomes too dry before the millet is cooked.
