  • 500 g Chicken thighs(bone-in, skin-on, cut into pieces)
  • 3 tbsp Olive oil
  • 2 medium Onions(chopped)
  • 4 cloves Garlic(minced)
  • 1 tbsp Ginger(grated fresh)
  • 400 g Tomatoes(diced)
  • 2 medium Carrots(peeled and diced)
  • 2 medium Potatoes(peeled and diced)
  • 1 medium Zucchini(diced)
  • 1.5 tsp Cumin
  • 1.5 tsp Coriander
  • 1 tsp Turmeric
  • 0.5 tsp Cinnamon
  • 0.25 tsp Cayenne pepper(or to taste)
  • 1 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(freshly ground)
  • 2 cups Chicken broth
  • 0.25 cup Fresh cilantro(chopped, for garnish)

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Season chicken pieces with salt and pepper, then brown them on all sides. Remove chicken and set aside.

    Add chopped onions to the pot and sauté until softened and lightly golden. Add minced garlic and grated ginger, and cook for another minute until fragrant.
