- 1.5 lbs Firm white fish fillets(such as snapper, mahi-mahi, or grouper, cut into chunks)
- 1 can (13.5 oz) Coconut milk
- 1 medium Onion(chopped)
- 1 medium Bell pepper(any color, chopped)
- 3 cloves Garlic(minced)
- 1 tsp Ginger(grated)
- 2 tbsp Curry powder
- 1 tsp Turmeric powder
- 1 tsp Thyme(dried or 1 tbsp fresh)
- 1/2 small Scotch bonnet pepper(finely chopped, seeds removed for less heat, or to taste)
- 1 tbsp Lime juice
