Salatet Tahini (Egyptian Tahini Sauce)
A classic Egyptian tahini sauce, also known as Salatet Tahini, this creamy and tangy condiment is made with tahini, lemon juice, garlic, and fresh parsley. It's incredibly versatile and serves as a delicious accompaniment to grilled meats, falafel, or as a dip for pita bread.

- 200 g Tahini(Good quality, smooth tahini is recommended for the best flavor and texture.)
- 60 ml Fresh lemon juice(Approximately 2-3 medium lemons. Ensure it's fresh for optimal brightness.)
- 3 cloves Garlic(Peeled and minced or finely grated. Adjust to your preference.)
- 1/4 cup Fresh parsley(Finely chopped, leaves and tender stems. Reserve some for garnish.)
- 1 tsp Ground cumin(Adds a warm, earthy flavor.)
- 120-180 ml Cold water(Start with 120ml and add more as needed to reach desired consistency. Cold water helps emulsify the sauce.)
- 1/2 tsp Salt(Or to taste. Enhances all the flavors.)

In a medium bowl, combine the tahini and fresh lemon juice. Whisk vigorously. The mixture will seize up and become thick and paste-like. This is normal.

Gradually add the cold water, about 1/4 cup (60ml) at a time, while whisking continuously. The tahini mixture will start to lighten in color and become smoother. Continue adding water until you reach a creamy, pourable consistency, similar to heavy cream. You may not need all the water, or you might need a little more.

Add the minced garlic, ground cumin, and salt to the bowl. Stir well to incorporate all the ingredients evenly. Taste and adjust seasoning if necessary, adding more salt or lemon juice as desired.

Gently fold in the finely chopped parsley, reserving a small amount for garnish. Stir just enough to distribute it throughout the sauce.
