Eritrean Vegetable Rice Pilaf

- 2 tbsp Vegetable oil

- 1 cup Peas(frozen or fresh)
- 1 tsp Turmeric powder
- 1 tsp Cumin powder
- 0.5 tsp Cinnamon powder
- 4 cups Vegetable broth
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)
- 0.5 cup Almonds(slivered, toasted for garnish (optional))

Rinse the basmati rice thoroughly under cold water until the water runs clear. Drain well.

Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the finely chopped onion and sauté until softened and translucent, about 5-7 minutes.
