- 2 lbs Pork shoulder(cut into 1.5-inch cubes)
- 2 tbsp Achiote oil
- 1 large Red onion(chopped)
- 1 medium Bell pepper(chopped)
- 4 cloves Garlic(minced)
- 1 tsp Cumin
- 1.5 tsp Salt(or to taste)
- 0.5 tsp Black pepper(or to taste)
- 1 cup Beer
- 2 cups Water(or more as needed)
- 2 medium Green plantains(peeled and cut into 1-inch pieces)
- 0.5 cup Natural peanut butter(smooth or chunky)
- 0.25 cup Cilantro(chopped, for garnish)

Season the pork cubes with salt and pepper.

Heat the achiote oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Sear the pork cubes in batches until browned on all sides. Remove the pork and set aside.

Add the chopped onion and bell pepper to the pot. Sauté until softened, about 5-7 minutes.

Stir in the minced garlic and cumin, and cook for 1 minute until fragrant.

Deglaze the pot with the beer, scraping up any browned bits from the bottom. Let it simmer for 2 minutes.

Return the seared pork to the pot. Add 2 cups of water, ensuring the pork is mostly submerged. Bring to a simmer, then reduce heat to low, cover, and cook for 1.5 hours, or until the pork is tender.
