Estonian Apple Strudel
Õunastruudel
A delightful pastry filled with tender, spiced apples, often made with a buttery puff pastry or a thin, flaky dough. It's a popular dessert, especially during apple season, and is delicious served warm with vanilla sauce or ice cream.

🧂 Ingredients
- 500 g Butter pastry(such as puff pastry or homemade strudel dough)
- 1 kg Apples(tart varieties like Antonovka, peeled, cored, and thinly sliced)
- 150 g Sugar(brown sugar recommended)
- 2 tsp Cinnamon
- 50 g Breadcrumbs(optional, for thickening)
- 100 g Raisins(optional)
- 1 tbsp Lemon juice
- 50 g Butter(melted, for brushing)
- 1 large Egg(beaten, for egg wash)
👨🍳 Instructions
- 1
Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
- 2
If using homemade dough, roll it out very thinly on a floured surface. If using store-bought puff pastry, roll it out slightly to fit your baking sheet.
- 3
In a bowl, toss the sliced apples with sugar, cinnamon, lemon juice, breadcrumbs (if using), and raisins (if using). Mix well.
- 4
Spread the apple mixture evenly over the pastry, leaving a small border around the edges.
- 5
Brush the edges of the pastry with melted butter. Roll up the pastry tightly, like a Swiss roll, to enclose the filling. Pinch the seams to seal.
- 6
Place the strudel seam-side down on the prepared baking sheet. Brush the top with melted butter and then with the beaten egg for a golden finish.
- 7
Bake for 35-40 minutes, or until the pastry is golden brown and crisp, and the apple filling is tender.
- 8
Let cool slightly before slicing and serving. Delicious served warm with vanilla sauce, whipped cream, or vanilla ice cream.
💡 Pro Tips
- ✓Use firm, tart apples for the best flavor and texture.
- ✓If using puff pastry, ensure it is well-chilled before rolling.
- ✓For a more traditional flavor, consider adding a pinch of ground cardamom or nutmeg to the apple filling.
