🧂 Ingredients

  • 900 g Green beans(trimmed and cut lengthwise if large)
  • 3 tbsp Olive oil
  • 1 medium Onion(diced)
  • 2 medium Tomatoes(peeled and diced)
  • 2 cloves Garlic(minced)
  • 3 tbsp Water or vegetable stock
  • to taste Salt
  • to taste Black pepper
  • for serving (optional) Lemon juice

👨‍🍳 Instructions

  1. 1

Heat the olive oil in a large pot or deep skillet over medium heat. Add the diced onion and sauté until soft and translucent, about 5-7 minutes.

  2. 2

Add the trimmed green beans to the pot and shallow fry for 2-3 minutes, stirring occasionally, until they are slightly tender.

  3. 3

Stir in the diced tomatoes, minced garlic, salt, and pepper. Cook for another 2-3 minutes until the tomatoes begin to break down.

  4. 4

Add the water or vegetable stock. Bring the mixture to a simmer, then reduce the heat to low, cover the pot, and cook for 20-25 minutes, or until the green beans are tender. Stir occasionally.

  5. 5

Taste and adjust seasoning with salt and pepper if needed. Serve hot, with a squeeze of fresh lemon juice if desired.

💡 Pro Tips

  • For a richer flavor, you can add a tablespoon of tomato paste along with the diced tomatoes.
  • If using larger green beans, you can cut them in half lengthwise for more even cooking.
  • This dish can be made ahead of time and reheated.

🔄 Variations

  • Some variations include adding diced potatoes to the stew.
  • For a heartier version, small cubes of lamb or beef can be browned before adding the onions.
