Finnish Mixed Berry Soup (Marjakeitto)
A vibrant and refreshing Finnish berry soup, perfect as a light dessert or a comforting snack. Made with a medley of berries, it's naturally sweet and slightly thickened, offering a taste of Finnish summer any time of the year.

🧂 Ingredients
- 500 g Mixed berries(fresh or frozen (e.g., blueberries, raspberries, strawberries, lingonberries))
- 750 ml Water
- 100 g Sugar(or to taste)
- 2 tbsp Potato starch or cornstarch
- 50 ml Cold water(for mixing starch)
- 1 tsp Vanilla extract(optional)
👨🍳 Instructions
- 1
Combine the mixed berries and 750 ml of water in a medium saucepan. Bring to a gentle boil over medium heat.
- 2
Add the sugar to the saucepan and stir until dissolved. Adjust the sugar amount to taste, depending on the sweetness of the berries. Let the mixture simmer for 5-7 minutes until the berries have softened and released their juices.
- 3
In a small bowl, whisk the potato starch (or cornstarch) with 50 ml of cold water until smooth and lump-free.
- 4
Slowly pour the starch mixture into the simmering berry soup, stirring constantly to avoid lumps. Allow the soup to thicken while continuing to stir, about 1-2 minutes.
- 5
If desired, stir in the vanilla extract for added flavor. Remove the saucepan from heat.
- 6
Serve the berry soup warm on its own as a dessert, or chilled with oatmeal, porridge, or a dollop of cream or yogurt.
