Finnish Pork and Rye Dumplings with Dill Sauce - Finland traditional dish

🧂 Ingredients

  • 400 g Ground pork
  • 150 g Rye flour(plus more for dusting)
  • 1 medium Onion(finely chopped)
  • 1 large Egg
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Fresh dill(chopped)
  • 200 ml Sour cream
  • 2 tbsp Butter
  • 100 ml Vegetable broth
  • 1 tbsp Lemon juice

👨‍🍳 Instructions

  1. 1

In a bowl, combine ground pork, chopped onion, egg, rye flour, salt, and pepper. Mix well until combined.

💡 Tip: Do not overmix, as this can make the dumplings tough.
  2. 2

Lightly flour a work surface. Roll the pork mixture into small, bite-sized balls (about 1-inch diameter).

  3. 3

Bring a large pot of salted water to a boil. Gently drop the dumplings into the boiling water.

💡 Tip: Cook in batches if necessary to avoid overcrowding the pot.
  4. 4

Cook the dumplings for about 10-12 minutes, or until they float to the surface and are cooked through.

  5. 5

While the dumplings are cooking, prepare the dill sauce. Melt butter in a saucepan over medium heat. Add vegetable broth and bring to a simmer.

  6. 6

Stir in sour cream, chopped dill, and lemon juice. Season with salt and pepper to taste. Heat gently, but do not boil.

💡 Tip: The sauce should be smooth and creamy.
  7. 7

Drain the cooked dumplings and serve immediately with the warm dill sauce.

💡 Pro Tips

  • For a richer flavor, you can add a pinch of marjoram to the dumpling mixture.
  • If you don't have rye flour, all-purpose flour can be used, but the flavor will be less traditional.
  • The dill sauce can be made ahead of time and gently reheated.

🔄 Variations

  • Add finely grated carrots or parsnips to the dumpling mixture for added vegetables.
  • Serve with a side of lingonberry jam for a sweet contrast.
