🧂 Ingredients

  • 750 g Pork shoulder(cut into 1-inch cubes)
  • 500 g Taro leaves(fresh or frozen, chopped)
  • 800 ml Coconut milk(full-fat)
  • 1 large Onion(chopped)
  • 4 cloves Garlic(minced)
  • 1 inch piece Ginger(grated)
  • 250 ml Water or chicken broth
  • 1.5 tsp Salt(or to taste)
  • 1 tsp Black pepper(freshly ground, or to taste)
  • 2 tbsp Cooking oil

👨‍🍳 Instructions

  1. 1

Heat cooking oil in a large pot or Dutch oven over medium-high heat. Brown the pork cubes on all sides. Remove pork and set aside.

💡 Tip: Browning the pork adds depth of flavor.
  2. 2

Add the chopped onion to the pot and sauté until softened, about 5 minutes. Add the minced garlic and grated ginger and cook for another minute until fragrant.

💡 Tip: Be careful not to burn the garlic.
  3. 3

Return the browned pork to the pot. Add the chopped taro leaves, coconut milk, and water or chicken broth.

💡 Tip: If using fresh taro leaves, ensure they are thoroughly washed.
  4. 4

Season with salt and black pepper. Bring the stew to a simmer, then reduce heat to low, cover, and cook for at least 1 hour and 15 minutes, or until the pork is very tender.

💡 Tip: Stir occasionally to prevent sticking.
  5. 5

Check seasoning and adjust if necessary. If the stew is too thick, add a little more water or broth. If too thin, simmer uncovered for a few minutes to reduce.

💡 Tip: The stew should have a rich, creamy consistency.
  6. 6

    Serve hot, traditionally with rice.

💡 Tip: This stew is even better the next day as the flavors meld.

💡 Pro Tips

  • Taro leaves can be slightly irritating if not cooked thoroughly. Ensure they are well-cooked until tender.
  • For a richer, creamier stew, use full-fat coconut milk.
  • If you can't find fresh taro leaves, frozen chopped ones work well.

🔄 Variations

  • Add chunks of sweet potato or yam to the stew for extra heartiness.
  • Include other leafy greens like spinach or watercress.
  • For a touch of acidity, add a squeeze of lime juice before serving.
