- 1 inch piece Ginger(grated)
- 1 small Scotch bonnet pepper(finely chopped (optional, adjust to taste))

- 1 tsp Smoked paprika
- 1 tsp Curry powder
- to taste Salt
- to taste Black pepper
- 1/4 cup Fresh cilantro(chopped, for garnish)
- optional Cooked fish or chicken(for serving)
👨🍳 Instructions
- 1
Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened, about 5-7 minutes.
- 2
Add minced garlic and grated ginger, sauté for another minute until fragrant.
- 3
Stir in the tomato paste and cook for 2-3 minutes, stirring constantly, until it darkens slightly.
- 4
Add the crushed tomatoes, scotch bonnet pepper (if using), smoked paprika, and curry powder. Stir well to combine.
- 5
Pour in the chicken or vegetable broth. Bring the mixture to a simmer, then reduce heat and let it cook for 10 minutes to allow the flavors to meld.
- 6
Add the cubed yams to the pot. Ensure they are mostly submerged in the sauce. If needed, add a little more broth or water.
- 7
Season with salt and black pepper to taste. Cover the pot and let the stew simmer for 30-35 minutes, or until the yams are tender but not mushy. Stir occasionally.
- 8
If serving with cooked fish or chicken, add it to the stew during the last 5-10 minutes of cooking to heat through.
- 9
Garnish with fresh chopped cilantro before serving.
