  • 1 kg Yam(peeled and cut into 1-inch cubes)
  • 400 g Tomatoes(crushed or pureed)
  • 1 large Onion(chopped)
  • 4 cloves Garlic(minced)
  • 1 inch piece Ginger(grated)
  • 1 small Scotch bonnet pepper(finely chopped (optional, adjust to taste))
  • 3 tbsp Vegetable oil
  • 2 tbsp Tomato paste
  • 500 ml Chicken or vegetable broth
  • 1 tsp Smoked paprika
  • 1 tsp Curry powder
  • to taste Salt
  • to taste Black pepper
  • 1/4 cup Fresh cilantro(chopped, for garnish)
  • optional Cooked fish or chicken(for serving)

    Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened, about 5-7 minutes.

    Add minced garlic and grated ginger, sauté for another minute until fragrant.

    Stir in the tomato paste and cook for 2-3 minutes, stirring constantly, until it darkens slightly.

    Add the crushed tomatoes, scotch bonnet pepper (if using), smoked paprika, and curry powder. Stir well to combine.

    Pour in the chicken or vegetable broth. Bring the mixture to a simmer, then reduce heat and let it cook for 10 minutes to allow the flavors to meld.
