🧂 Ingredients
- 2 lbs Goat meat(cut into 2-inch chunks)
- 2 tablespoons Vegetable oil
- 1 large Onion(chopped)
- 3 cloves Garlic(minced)
- 1 medium Bell pepper(chopped)
- 2 medium Tomatoes(chopped)
- 2 medium Carrots(sliced)
- 2 medium Potatoes(peeled and cubed)
- 1 teaspoon Thyme(dried)
- 1 teaspoon Allspice(ground)
- 1 teaspoon Paprika
- 0.5 teaspoon Cayenne pepper(optional, for heat)
- 4 cups Beef or vegetable broth
- 1 cup Water
- 2 tablespoons Soy sauce
- 1 tablespoon Worcestershire sauce
- Salt(to taste)
- Black pepper(to taste)
- 2 tablespoons Fresh parsley(chopped, for garnish)
👨🍳 Instructions
- 1
Rinse the goat meat under cold water and pat dry with paper towels. Season with salt and pepper.
- 2
Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Sear the goat meat in batches until browned on all sides. Remove the meat and set aside.
- 3
In the same pot, add the chopped onion, minced garlic, and chopped bell pepper. Sauté until softened, about 5-7 minutes.
- 4
Stir in the chopped tomatoes, dried thyme, ground allspice, paprika, and cayenne pepper (if using). Cook for another 2 minutes until fragrant.
- 5
Return the browned goat meat to the pot. Add the sliced carrots and cubed potatoes. Pour in the beef or vegetable broth and 1 cup of water. Stir well to combine.
- 6
Bring the stew to a boil, then reduce the heat to low, cover, and simmer for at least 1.5 to 2 hours, or until the goat meat is very tender and the vegetables are cooked through. Stir occasionally.
- 7
Stir in the soy sauce and Worcestershire sauce. Simmer for an additional 10 minutes to allow the flavors to meld.
- 8
Taste and adjust seasoning with salt and pepper as needed. Garnish with fresh chopped parsley before serving.
💡 Pro Tips
- ✓For extra tender meat, you can marinate the goat meat overnight in a mixture of lime juice, garlic, and herbs.
- ✓If you prefer a thicker stew, you can create a slurry with 1-2 tablespoons of cornstarch mixed with a little cold water and stir it into the simmering stew during the last 15 minutes of cooking.
- ✓Goat water is often served with rice, boiled dumplings, or crusty bread to soak up the flavorful broth.
🔄 Variations
- Add other root vegetables like yams or dasheen.
- For a spicier kick, add more cayenne pepper or a whole scotch bonnet pepper during the simmering process (remove before serving).
