🧂 Ingredients

  • 2 lbs Goat meat(cut into 2-inch chunks)
  • 2 tablespoons Vegetable oil
  • 1 large Onion(chopped)
  • 3 cloves Garlic(minced)
  • 1 medium Bell pepper(chopped)
  • 2 medium Tomatoes(chopped)
  • 2 medium Carrots(sliced)
  • 2 medium Potatoes(peeled and cubed)
  • 1 teaspoon Thyme(dried)
  • 1 teaspoon Allspice(ground)
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cayenne pepper(optional, for heat)
  • 4 cups Beef or vegetable broth
  • 1 cup Water
  • 2 tablespoons Soy sauce
  • 1 tablespoon Worcestershire sauce
  • Salt(to taste)
  • Black pepper(to taste)
  • 2 tablespoons Fresh parsley(chopped, for garnish)

👨‍🍳 Instructions

  1. 1

Rinse the goat meat under cold water and pat dry with paper towels. Season with salt and pepper.

  2. 2

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Sear the goat meat in batches until browned on all sides. Remove the meat and set aside.

  3. 3

In the same pot, add the chopped onion, minced garlic, and chopped bell pepper. Sauté until softened, about 5-7 minutes.

  4. 4

Stir in the chopped tomatoes, dried thyme, ground allspice, paprika, and cayenne pepper (if using). Cook for another 2 minutes until fragrant.

  5. 5

Return the browned goat meat to the pot. Add the sliced carrots and cubed potatoes. Pour in the beef or vegetable broth and 1 cup of water. Stir well to combine.

  6. 6

Bring the stew to a boil, then reduce the heat to low, cover, and simmer for at least 1.5 to 2 hours, or until the goat meat is very tender and the vegetables are cooked through. Stir occasionally.

  7. 7

Stir in the soy sauce and Worcestershire sauce. Simmer for an additional 10 minutes to allow the flavors to meld.

  8. 8

Taste and adjust seasoning with salt and pepper as needed. Garnish with fresh chopped parsley before serving.

💡 Pro Tips

  • For extra tender meat, you can marinate the goat meat overnight in a mixture of lime juice, garlic, and herbs.
  • If you prefer a thicker stew, you can create a slurry with 1-2 tablespoons of cornstarch mixed with a little cold water and stir it into the simmering stew during the last 15 minutes of cooking.
  • Goat water is often served with rice, boiled dumplings, or crusty bread to soak up the flavorful broth.

🔄 Variations

  • Add other root vegetables like yams or dasheen.
  • For a spicier kick, add more cayenne pepper or a whole scotch bonnet pepper during the simmering process (remove before serving).
