🧂 Ingredients
- 1.5 lbs Chicken thighs(cut into bite-sized pieces)
- 0.5 cup All-purpose flour
- 1 tsp Salt
- 1 tsp Black pepper
- 2 tbsp Vegetable oil
- 1 medium Onion(diced)
- 3 cloves Garlic(minced)
- 1 medium Bell pepper(seeded and sliced)
- 10 oz Guinness Stout(or 1 cup)
- 1 cup Chicken broth
- 1 tbsp Tomato paste
- 1 tsp Chili powder
- 1 tbsp Fresh parsley(chopped, for garnish)
👨🍳 Instructions
- 1
In a large ziploc bag, combine flour, salt, and pepper. Add chicken pieces and shake to coat evenly.
💡 Tip: Ensure all chicken pieces are well-coated with the flour mixture. - 2
Heat vegetable oil in a large skillet or wok over medium-high heat. Fry the coated chicken for 3 minutes on each side until golden brown. Remove chicken and set aside on paper towels to drain.
- 3
Pour off excess oil, leaving about 2 tablespoons in the skillet. Add diced onion and minced garlic, and sauté for about 4 minutes until softened.
- 4
Add the Guinness Stout to the skillet and let it reduce by half, scraping up any browned bits from the bottom of the pan.
- 5
Return the fried chicken to the skillet. Add chicken broth, tomato paste, sliced bell pepper, and chili powder. Stir to combine.
💡 Tip: Ensure all ingredients are well incorporated. - 6
Bring the stew to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.
- 7
Garnish with fresh chopped parsley before serving.
💡 Tip: Serve hot with rice, bread, or ground provisions.
