- 1.5 cups Fine cornmeal
- 3 cups Water(for soaking cornmeal)
- 1.5 cups Water(for spice infusion)
- 3 Cinnamon sticks
- 1 tsp Whole cloves
- 1 tsp Whole allspice
- 2 cups Whole milk
- 2 12oz cans Evaporated milk
- 4 tbsp Butter
- 0.5 cup Sugar(or to taste)
- 0.5 tsp Salt(or to taste)
- 1 tsp Vanilla extract
- 1 cup Coconut milk(optional, can substitute for 1 cup of whole milk)

In a bowl, combine the fine cornmeal with 3 cups of water. Stir well to prevent lumps and let it soak for at least 10 minutes.

In a pot, combine 1.5 cups of water with cinnamon sticks, whole cloves, and whole allspice. Bring to a boil, then reduce heat and simmer for 5 minutes to create a spice infusion. Strain the liquid and reserve the cinnamon sticks.

In a separate large saucepan, combine the whole milk, evaporated milk, butter, sugar, and salt. Heat over medium heat, stirring until butter is melted and sugar is dissolved.
