Harina de Maíz Dominicana - Dominican Republic traditional dish

🧂 Ingredients

  • 1.5 cups Fine cornmeal
  • 3 cups Water(for soaking cornmeal)
  • 1.5 cups Water(for spice infusion)
  • 3 Cinnamon sticks
  • 1 tsp Whole cloves
  • 1 tsp Whole allspice
  • 2 cups Whole milk
  • 2 12oz cans Evaporated milk
  • 4 tbsp Butter
  • 0.5 cup Sugar(or to taste)
  • 0.5 tsp Salt(or to taste)
  • 1 tsp Vanilla extract
  • 1 cup Coconut milk(optional, can substitute for 1 cup of whole milk)

👨‍🍳 Instructions

  1. 1

In a bowl, combine the fine cornmeal with 3 cups of water. Stir well to prevent lumps and let it soak for at least 10 minutes.

  2. 2

In a pot, combine 1.5 cups of water with cinnamon sticks, whole cloves, and whole allspice. Bring to a boil, then reduce heat and simmer for 5 minutes to create a spice infusion. Strain the liquid and reserve the cinnamon sticks.

  3. 3

In a separate large saucepan, combine the whole milk, evaporated milk, butter, sugar, and salt. Heat over medium heat, stirring until butter is melted and sugar is dissolved.

  4. 4

Add the strained spice infusion (and reserved cinnamon sticks, if desired for extra flavor) to the milk mixture. Bring to a gentle simmer.

  5. 5

Gradually whisk the soaked cornmeal mixture into the simmering milk. Stir continuously to prevent lumps and ensure a smooth texture.

  6. 6

Continue to cook, stirring constantly, for about 10-15 minutes, or until the porridge has thickened to your desired consistency. If using coconut milk, stir it in during the last few minutes of cooking.

  7. 7

Stir in the vanilla extract. Taste and adjust sweetness or salt if needed. Serve hot, garnished with cinnamon sticks if desired.

💡 Pro Tips

  • Stirring constantly is key to achieving a smooth, lump-free porridge.
  • Adjust the amount of sugar to your personal preference.
  • For a richer flavor, use coconut milk instead of or in addition to regular milk.

🔄 Variations

  • Add a pinch of nutmeg or ground cinnamon for extra spice.
  • Serve with fresh fruit or a drizzle of honey.
  • For a quicker version, use instant cornmeal, but adjust cooking time accordingly.
