    Prepare the meat: In a large pot or Dutch oven, heat 2 tbsp of ghee over medium-high heat (around 190°C / 375°F). Sear the goat or lamb cubes on all sides until nicely browned. Remove the meat and set aside.

    Sauté aromatics: Add the remaining 2 tbsp of ghee to the same pot. Reduce heat to medium (around 175°C / 350°F). Add the chopped onion and cook until softened and translucent, about 5-7 minutes.
