🧂 Ingredients

  • 1.5 kg Goat meat(bone-in, cut into 1.5-inch pieces)
  • 4 tbsp Curry powder(Jamaican style)
  • 2 tsp All-purpose seasoning
  • 1-2 whole Scotch bonnet pepper(seeds removed for less heat, or finely chopped)
  • 1 large Onion(chopped)
  • 4 cloves Garlic(minced)
  • 1 inch piece Ginger(grated)
  • 3 sprigs Thyme
  • 3 stalks Scallions(chopped)
  • 400 ml Coconut milk(full fat)
  • 2 tbsp Vegetable oil
  • 2 cups Water(or as needed)
  • to taste Salt
  • to taste Black pepper

    Wash and season the goat meat with curry powder, all-purpose seasoning, salt, and black pepper. Let it marinate for at least 30 minutes, or preferably longer in the refrigerator.

    Heat vegetable oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Brown the goat meat on all sides in batches, then set aside.

    In the same pot, add the chopped onion and sauté until softened, about 5 minutes.

    Add the minced garlic and grated ginger, sauté for another minute until fragrant.

    Return the browned goat meat to the pot. Add the thyme sprigs, chopped scallions, and whole scotch bonnet pepper(s). Stir well to combine.

    Pour in the coconut milk and water. Bring to a simmer, then reduce the heat to low, cover the pot, and let it cook slowly until the goat meat is very tender.
