Jamaican Pork Belly Stew with Sweet Potatoes

- 1.5 kg Pork belly(cut into 2-inch cubes)
- 2 tbsp Vegetable oil
- 2 large Onions(chopped)
- 6 minced Garlic cloves
- 1 tbsp Ginger(freshly grated)
- 1 whole Scotch bonnet pepper(seeded and minced (optional, for heat))
- 4 fresh Thyme sprigs
- 1 tsp Allspice berries(crushed)
- 2 tbsp Tomato paste
- 4 cups Chicken broth
- 700 g Sweet potatoes(peeled and cut into 1.5-inch chunks)

Pat the pork belly cubes dry and season generously with salt and black pepper.

Heat vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Sear the pork belly in batches until browned on all sides. Remove pork and set aside.

Reduce heat to medium. Add chopped onions to the pot and sauté until softened, about 5-7 minutes. Add minced garlic, grated ginger, and minced scotch bonnet pepper (if using), and cook for another minute until fragrant.
