Jordanian Lentil Fritters (Mashed Lentil Patties)
Savory and satisfying fritters made from mashed lentils, mixed with aromatic vegetables and spices, then pan-fried until golden and crispy. A popular vegetarian option in Jordanian cuisine.

- 1 cup Red lentils(uncooked, rinsed)
- 2 cups Water
- 1 medium Onion(finely chopped)
- 2 cloves Garlic cloves(minced)
- 0.25 cup Fresh parsley(chopped)
- 1 tsp Ground cumin
- 0.5 tsp Ground coriander
- 0.5 tsp Turmeric
- 0.5 cup All-purpose flour(or chickpea flour)
- 1 large Egg
- to taste Salt
- to taste Black pepper
- for frying Olive oil

Cook the rinsed red lentils with water and salt until tender, about 15-20 minutes. Drain any excess water and mash the lentils in a bowl.

In a separate pan, heat 1 tablespoon of olive oil and sauté the chopped onion until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Add the sautéed onion and garlic to the mashed lentils. Stir in the chopped parsley, cumin, coriander, turmeric, egg, salt, and pepper.
