Jordanian Lentil Fritters (Mashed Lentil Patties) - Jordan traditional dish

🧂 Ingredients

  • 1 cup Red lentils(uncooked, rinsed)
  • 2 cups Water
  • 1 medium Onion(finely chopped)
  • 2 cloves Garlic cloves(minced)
  • 0.25 cup Fresh parsley(chopped)
  • 1 tsp Ground cumin
  • 0.5 tsp Ground coriander
  • 0.5 tsp Turmeric
  • 0.5 cup All-purpose flour(or chickpea flour)
  • 1 large Egg
  • to taste Salt
  • to taste Black pepper
  • for frying Olive oil

👨‍🍳 Instructions

  1. 1

Cook the rinsed red lentils with water and salt until tender, about 15-20 minutes. Drain any excess water and mash the lentils in a bowl.

  2. 2

In a separate pan, heat 1 tablespoon of olive oil and sauté the chopped onion until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

  3. 3

Add the sautéed onion and garlic to the mashed lentils. Stir in the chopped parsley, cumin, coriander, turmeric, egg, salt, and pepper.

💡 Tip: Ensure all ingredients are well combined.
  4. 4

Gradually add the flour, mixing until a cohesive dough forms. The mixture should be firm enough to shape.

  5. 5

Shape the mixture into small patties, about 2 inches in diameter.

  6. 6

Heat about 1/4 inch of olive oil in a non-stick skillet over medium heat. Fry the patties for 3-4 minutes per side, until golden brown and crispy.

💡 Tip: Do not overcrowd the pan; fry in batches if necessary.
  7. 7

Remove the fritters from the skillet and drain on paper towels.

💡 Pro Tips

  • Serve hot with a side of tahini sauce or a yogurt-based dip.
  • These fritters can also be baked in the oven at 375°F (190°C) for 20-25 minutes, flipping halfway.
  • For a vegan option, omit the egg and use a flax egg (1 tbsp flaxseed meal + 3 tbsp water, let sit for 5 minutes) or omit the egg and add a little more flour.

🔄 Variations

  • Add grated carrots or finely chopped bell peppers to the mixture for extra vegetables.
  • Incorporate a pinch of chili flakes for a spicy kick.
  • Serve with a lemon wedge for squeezing over the fritters.
