Kanda (Beef and Pumpkin Seed Meatballs)
Kanda features savory meatballs made from ground beef and toasted pumpkin seeds, simmered in a flavorful tomato and onion sauce. This dish is a unique way to stretch meat and add a nutty depth to the sauce.

🧂 Ingredients
- 500 g Ground beef
- 100 g Toasted pumpkin seeds (pepitas)(ground into a powder or fine meal)
- 2 large Onion(1 finely chopped for meatballs, 1 finely chopped for sauce)
- 3 cloves Garlic(minced)
- 1 large Eggs(beaten)
- 2 tbsp Tomato paste
- 400 g Canned crushed tomatoes
- 2 tbsp Palm oil or vegetable oil
- 1 small Chili pepper(finely chopped (optional, for heat))
- to taste Salt
- to taste Black pepper
- 2 tbsp Fresh parsley(chopped, for garnish)
👨🍳 Instructions
- 1
In a bowl, combine the ground beef, ground pumpkin seeds, half of the finely chopped onion (from the 2 large onions), minced garlic, beaten egg, salt, and pepper. Mix well and form into small meatballs (about 1-inch diameter).
- 2
In a separate bowl, mix the tomato paste with a little water to loosen it. Set aside.
- 3
Heat the palm oil in a large pot or Dutch oven over medium heat. Add the remaining finely chopped onion and sauté until softened and lightly browned, about 7-10 minutes.
- 4
Add the chopped chili pepper (if using) and cook for 1 minute until fragrant.
- 5
Stir in the loosened tomato paste and cook for another minute.
- 6
Add the crushed tomatoes and bring the sauce to a simmer. Gently add the meatballs to the simmering sauce, ensuring they are mostly submerged.
- 7
Cover the pot and let it simmer for 25-30 minutes, or until the meatballs are cooked through and the sauce has thickened. Stir occasionally to prevent sticking.
- 8
Season the sauce with salt and pepper to taste. Garnish with fresh parsley before serving.
💡 Pro Tips
- ✓Toasting the pumpkin seeds before grinding enhances their flavor.
- ✓If the sauce becomes too thick, add a little water or broth.
- ✓Authentic Central African recipes sometimes omit salt due to its expense; adjust to your preference.
🔄 Variations
- Add chopped okra to the sauce during the last 10 minutes of cooking.
- Use a mix of beef and lamb for the meatballs.
