Kanda ti Nyma (Meatballs in Peanut Sauce)
Savory beef meatballs simmered in a rich and creamy peanut sauce, often with the addition of okra and spices. This dish is a flavorful representation of Central African cuisine.

🧂 Ingredients
- 1 lb Ground beef
- 2 large Onions(finely chopped)
- 2 large Eggs(beaten)
- 1 small Chili pepper(finely chopped, or to taste)
- 2 cloves Garlic(finely chopped)
- 2 tbsp Palm oil or groundnut oil
- 2 cups Frozen cut okra
- 0.5 cup Unsweetened peanut butter
- 1 cup Warm water
- 0.5 tsp Salt(or to taste (optional))
- 1 pinch Hot pepper powder(for serving (optional))
👨🍳 Instructions
- 1
In a bowl, mix the ground beef with half of one finely chopped onion, the chili pepper, garlic, and beaten eggs. Season with salt if using. Shape the mixture into small meatballs.
- 2
Cover the meatballs and refrigerate for at least 1 hour to allow them to set.
- 3
Heat the palm oil or groundnut oil in a large pot or Dutch oven over medium heat. Add the remaining chopped onion and sauté until lightly browned.
- 4
Add the frozen okra to the pot and continue to fry for 5-10 minutes, stirring occasionally.
- 5
In a separate bowl, whisk together the peanut butter and warm water until smooth. Pour this mixture into the pot with the onions and okra.
- 6
Bring the sauce to a simmer, then carefully add the chilled meatballs to the pot.
- 7
Cover the pot and let it simmer for 25 minutes, turning the meatballs once halfway through, until they are cooked through and the okra is tender.
- 8
Taste and adjust seasoning with salt if needed. Serve hot, with hot pepper powder on the side for those who like extra spice.
- 9
Traditionally served over rice or with fufu.
💡 Pro Tips
- ✓Chilling the meatballs helps them hold their shape during cooking.
- ✓Salt can be expensive in the Central African Republic, so it's often omitted or used sparingly. Adjust to your taste.
- ✓If you don't have palm oil, groundnut oil or a neutral vegetable oil works well.
🔄 Variations
- Add diced tomatoes to the sauce for extra flavor and color.
- Incorporate other vegetables like spinach or bell peppers.
