Kenyan Sukuma Wiki and Beef Stew
A hearty and flavorful stew combining tender chunks of beef with the popular Kenyan greens, sukuma wiki (collard greens), simmered in a rich tomato and onion base. This dish is a staple in many Kenyan households, often served with ugali.

- 1 kg Beef stew meat(cut into 1-inch cubes)
- 3 tbsp Vegetable oil
- 2 medium Large onions(chopped)
- 4 cloves Garlic cloves(minced)
- 1 inch piece Ginger(grated)
- 400 g Tomatoes(crushed or diced)
- 500 ml Beef broth
- 2 tsp Curry powder
- 1 tsp Turmeric powder
- to taste Salt
- to taste Black pepper
- 1 kg Sukuma wiki (collard greens)(washed and chopped)

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes on all sides. Remove beef and set aside.

Add chopped onions to the pot and sauté until softened and translucent.

Stir in minced garlic and grated ginger, and cook for another minute until fragrant.

Add the crushed tomatoes, beef broth, curry powder, and turmeric powder. Season with salt and pepper.

Return the browned beef to the pot. Bring the stew to a simmer, then reduce heat to low, cover, and cook until the beef is tender.
