Kenyan Mchuzi wa Ndizi Mbivu (Unripe Banana Stew)

🧂 Ingredients
- 6-8 medium Unripe green bananas(peeled and cut into 1-inch chunks)
- 500 g Beef or chicken(cubed (optional))
- 2 medium Onions(chopped)
- 4 medium Tomatoes(chopped or crushed)
- 3 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 3 tbsp Cooking oil
- 2 cups Water or broth
- 1 tbsp Curry powder
- 1 tsp Turmeric powder
- 1 tsp Cumin powder
- to taste Salt
- to taste Black pepper
- 1/4 cup Cilantro(chopped, for garnish)

If using meat, brown it in a large pot or Dutch oven with 1 tbsp of oil over medium-high heat. Remove meat and set aside.

Add the remaining 2 tbsp of oil to the pot. Sauté the chopped onions until softened and translucent.

Add minced garlic and grated ginger, and cook for another minute until fragrant.

Stir in the curry powder, turmeric, and cumin. Cook for 30 seconds, stirring constantly.

Add the chopped tomatoes and cook until they break down and form a sauce.
