- 500 g Chicken breast or thighs(sliced thinly)
- 300 g Rice noodles(fresh or dried)
- 1 medium Onion(quartered)
- 2 inch piece Ginger(smashed)
- 5 cloves Garlic cloves(smashed)
- 2 pods Star anise
- 1 inch piece Cinnamon stick
- 3 tbsp Fish sauce
- 1 tsp Salt(or to taste)
- 1 tsp Sugar(optional)
- 3 stalks Scallions(chopped, for garnish)
- 1/4 cup Cilantro(chopped, for garnish)
- 1 cup Bean sprouts(for serving)
- 4 wedges Lime wedges(for serving)
- 1-2 small Chili peppers(sliced, for serving (optional))

Rinse chicken bones and place in a large pot. Cover with cold water and bring to a boil. Skim off any impurities, then drain and rinse the bones.

Return the bones to the pot. Add onion, ginger, garlic, star anise, and cinnamon stick. Cover with about 3 liters of fresh water.
