  • 2 pods Star anise
  • 1 inch piece Cinnamon stick
  • 3 tbsp Fish sauce
  • 1 tsp Salt(or to taste)
  • 1 tsp Sugar(optional)
  • 3 stalks Scallions(chopped, for garnish)
  • 1/4 cup Cilantro(chopped, for garnish)
  • 1 cup Bean sprouts(for serving)
  • 4 wedges Lime wedges(for serving)
  • 1-2 small Chili peppers(sliced, for serving (optional))

    Rinse chicken bones and place in a large pot. Cover with cold water and bring to a boil. Skim off any impurities, then drain and rinse the bones.
