🧂 Ingredients

  • 1 kg Pork bones
  • 500 g Chicken bones
  • 3 liters Water
  • 1 large Onion(halved)
  • 5 cm Ginger(sliced)
  • 2 tbsp Salt
  • 1 tbsp Sugar
  • 3 tbsp Fish sauce
  • 400 g Rice noodles(fresh or dried, cooked according to package directions)
  • 300 g Pork loin(thinly sliced)
  • 4 cloves Garlic(minced)
  • 2 tbsp Vegetable oil
  • 3 stalks Scallions(chopped)
  • 1/4 cup Cilantro(chopped)
  • 1 cup Bean sprouts(for serving)
  • 4 wedges Lime wedges(for serving)
  • to taste Chili sauce(for serving)

👨‍🍳 Instructions

  1. 1

Rinse pork and chicken bones thoroughly. Place in a large stockpot with water, onion, and ginger. Bring to a boil, then reduce heat and simmer for at least 45 minutes, skimming off any impurities.

  2. 2

Strain the broth, discarding solids. Return the clear broth to the pot and season with salt, sugar, and fish sauce. Keep warm over low heat.

💡 Tip: Taste and adjust seasoning as needed.
  3. 3

In a separate small pan, heat vegetable oil over medium heat. Add minced garlic and sauté until golden brown and fragrant. Remove garlic and set aside, leaving the infused oil in the pan.

  4. 4

Briefly stir-fry the thinly sliced pork loin in the garlic-infused oil until just cooked through. Do not overcook.

💡 Tip: This step adds a subtle flavor to the pork.
  5. 5

To serve, place a portion of cooked rice noodles in each bowl. Ladle the hot clear broth over the noodles. Top with the stir-fried pork, chopped scallions, cilantro, and fried garlic.

💡 Tip: Ensure the broth is piping hot when serving.
  6. 6

Serve immediately with a side of fresh bean sprouts and lime wedges. Offer chili sauce on the side for those who prefer extra spice.

💡 Pro Tips

  • For a richer broth, you can add a small piece of daikon radish during simmering.
  • Ensure the broth is strained very well to achieve a clear soup.
  • Fresh herbs are crucial for the authentic flavor of this soup.

🔄 Variations

  • Add thinly sliced chicken breast or shrimp for variety.
  • Include blanched bok choy or other leafy greens.
