Liberian Pepper Rice
A flavorful and spicy one-pot rice dish, where rice is cooked in a rich broth infused with peppers, onions, and various seasonings. It's a comforting and satisfying meal, often served with a side of meat or fish.

🧂 Ingredients
- 3 cups Parboiled rice
- 4 cups Chicken or beef broth
- 1 large Onions(chopped)
- 1-2 pieces Scotch bonnet peppers(or to taste, finely chopped or blended)
- 1/2 medium Bell pepper(chopped)
- 2 tbsp Tomato paste
- 2 pieces Seasoning cubes
- to taste Salt
- 1/2 tsp Black pepper
- 2 tbsp Vegetable oil
- 200 g Optional: Cooked chicken, beef, or fish

Rinse the parboiled rice thoroughly under cold water until the water runs clear. Drain well.

Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onions and sauté until softened, about 5 minutes.

Add the chopped bell pepper and finely chopped scotch bonnet peppers. Cook for another 2-3 minutes until fragrant.

Stir in the tomato paste and cook for 1-2 minutes, stirring constantly.

Add the rinsed rice to the pot and stir to coat it with the onion and pepper mixture.

Pour in the chicken or beef broth. Add the seasoning cubes, salt, and black pepper. Stir well.

Bring the mixture to a boil, then reduce the heat to low, cover tightly, and simmer for about 20-25 minutes, or until the rice is cooked and most of the liquid has been absorbed.

Once the rice is cooked, fluff it with a fork. If using, gently fold in the cooked chicken, beef, or fish.

Cover and let it steam for another 5-10 minutes off the heat.
