Lobio Kartuli (Georgian Red Bean Stew)

- 500 g Red kidney beans(dried, soaked overnight)
- 2 large Onions(finely chopped)
- 4 cloves Garlic(minced)
- 100 g Walnuts(finely ground)
- 1/2 bunch Cilantro(chopped)
- 1/4 bunch Parsley(chopped)
- 1 tsp Coriander powder
- 1/2 tsp Fenugreek powder (utskho suneli)
- 1/4 tsp Red pepper flakes(or to taste)
- 3 tbsp Vegetable oil
- as needed Water or vegetable broth

Drain and rinse the soaked kidney beans. Place them in a large pot and cover with fresh water. Bring to a boil, then reduce heat and simmer for about 1 hour, or until beans are tender but not mushy. Drain and set aside.
