Macedonian Baked Beans with Sausage

- 500 g Dried white beans(e.g., Navy or Cannellini, soaked overnight)
- 300 g Macedonian sausage(sliced (or a flavorful pork sausage))
- 2 medium Onions(chopped)
- 1 large Red bell pepper(chopped)
- 3 cloves Garlic cloves(minced)
- 400 g Crushed tomatoes
- 2 tbsp Tomato paste
- 3 tbsp Vegetable oil
- 1 tsp Paprika(sweet)
- 1/2 tsp Black pepper
- to taste Salt

- for garnish Fresh parsley(chopped)

Drain the soaked beans and place them in a large pot. Cover with fresh water and bring to a boil. Cook for 10 minutes, then drain and rinse.

In a large oven-safe pot or Dutch oven, heat vegetable oil over medium heat. Add the sliced sausage and cook until browned. Remove sausage and set aside.

Add chopped onions and red bell pepper to the pot. Sauté until softened, about 7-10 minutes. Add minced garlic and cook for 1 minute more.

Stir in the tomato paste, paprika, and black pepper. Cook for 1-2 minutes until fragrant.

Add the crushed tomatoes and the pre-cooked beans to the pot. Stir to combine. Add enough water or broth to just cover the beans.
