Macedonian Skara with Vegetables
A flavorful grilled dish featuring marinated pork or lamb skewers (skara) served with a medley of grilled vegetables, often accompanied by a fresh salad and bread.

🧂 Ingredients
- 800 g Pork shoulder or lamb leg(cut into 1.5-inch cubes)
- 4 tbsp Olive oil
- 2 tbsp Lemon juice
- 3 cloves Garlic(minced)
- 1 tsp Dried oregano
- 1 tsp Salt
- 0.5 tsp Black pepper
- 2 large Bell peppers (various colors)(cut into 1-inch pieces)
- 1 large Red onions(cut into wedges)
- 1 medium Zucchini(cut into 1-inch thick rounds)
- 200 g Cherry tomatoes

In a bowl, combine pork or lamb cubes with olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Marinate for at least 30 minutes, or preferably longer in the refrigerator.

Thread the marinated meat onto skewers, alternating with pieces of bell pepper and red onion.

Prepare the vegetables for grilling: toss zucchini and cherry tomatoes with a little olive oil, salt, and pepper.

Preheat grill to medium-high heat. Grill the meat skewers for 10-15 minutes, turning occasionally, until cooked through and nicely charred.

While the meat is grilling, grill the zucchini rounds and cherry tomatoes on a separate part of the grill or on a grill basket for about 5-7 minutes per side, until tender and slightly charred.

Serve the grilled skara with the grilled vegetables. Garnish with fresh parsley if desired.
