  • 1 kg Chicken pieces(bone-in, skin-on thighs and drumsticks recommended)
  • 2 large Onions(chopped)
  • 4 cloves Garlic(minced)
  • 1 inch piece Ginger(grated)
  • 4 tbsp Tomato paste
  • 400 g Canned crushed tomatoes
  • 150 g Peanut butter(smooth or crunchy, unsweetened)
  • 750 ml Chicken broth
  • 300 g Long-grain rice(rinsed)
  • 1 medium Bell pepper(chopped (any color))
  • 2 medium Carrots(diced)
  • 2 tbsp Vegetable oil
  • to taste Salt
  • to taste Black pepper
  • 1 small Optional: Chili pepper(finely chopped, for heat)

    Season chicken pieces with salt and pepper. Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the chicken on all sides, then remove and set aside.
