  • 3 tbsp Vegetable oil
  • 1 medium Onion(finely chopped)
  • 4 minced Garlic cloves
  • 1 inch piece Ginger(grated)
  • 2 medium Tomatoes(chopped)
  • 1 chopped Green chilies(optional, adjust to taste)
  • 2 tbsp Mauritian curry powder
  • 1 tsp Turmeric powder
  • 1 tsp Cumin seeds
  • 1 tsp Mustard seeds
  • 12 fresh Curry leaves
  • 12 whole Okra(washed and trimmed)
  • 250 ml Water
  • Salt(to taste)
  • Fresh coriander(chopped, for garnish)

    Season the fish chunks with salt and pepper. You can lightly dust them with cornflour if desired for a slightly crispier exterior after frying.

    Heat vegetable oil in a large pan or wok over medium heat. Add the chopped onion and sauté until softened and translucent.
