🧂 Ingredients
- 500 g Firm white fish fillets(such as snapper, cod, or sea bream, cut into chunks)
- 3 tbsp Vegetable oil
- 1 medium Onion(finely chopped)
- 4 minced Garlic cloves
- 1 inch piece Ginger(grated)
- 2 medium Tomatoes(chopped)
- 1 chopped Green chilies(optional, adjust to taste)
- 2 tbsp Mauritian curry powder
- 1 tsp Turmeric powder
- 1 tsp Cumin seeds
- 1 tsp Mustard seeds
- 12 fresh Curry leaves
- 12 whole Okra(washed and trimmed)
- 250 ml Water
- Salt(to taste)
- Fresh coriander(chopped, for garnish)
👨🍳 Instructions
- 1
Season the fish chunks with salt and pepper. You can lightly dust them with cornflour if desired for a slightly crispier exterior after frying.
- 2
Heat vegetable oil in a large pan or wok over medium heat. Add the chopped onion and sauté until softened and translucent.
⏱️ 4-5 minutes - 3
Add the minced garlic, grated ginger, chopped green chilies (if using), cumin seeds, mustard seeds, and curry leaves. Sauté for about 1 minute until fragrant.
⏱️ 1 minute - 4
Stir in the curry powder and turmeric powder. Cook for another minute, stirring constantly, until the spices are fragrant.
⏱️ 1 minute - 5
Add the chopped tomatoes and cook until they start to break down and form a sauce.
⏱️ 3-4 minutes - 6
Pour in the water and bring the mixture to a simmer. Add the whole okra pieces.
- 7
Cover the pan and let it simmer for about 15-20 minutes, or until the okra is tender and the sauce has thickened slightly. If you did not pre-fry the fish, add the fish chunks now and simmer gently for about 8-10 minutes, or until cooked through.
⏱️ 15-20 minutes - 8
Season with salt to taste. Garnish with fresh chopped coriander before serving.

- ✓Adjust the amount of curry powder and chilies to suit your spice preference.
🔄 Variations
- Add diced aubergine along with the okra.
- For a richer curry, you can add a splash of coconut milk towards the end of cooking.
