A hearty and flavorful stew made with wild boar, simmered with local vegetables and spices, offering a taste of traditional Burundian game meat preparation.

🧂 Ingredients
- 1 kg Wild boar meat(cut into 2-inch cubes)
- 2 large Onions(chopped)
- 4 medium Tomatoes(chopped)
- 6 cloves Garlic(minced)
- 1 inch Ginger(grated)
- 1 small Scotch bonnet pepper(finely chopped (optional, for heat))
- 2 medium Sweet potatoes(peeled and cubed)
- 500 g Cassava leaves(fresh or frozen, chopped)
- 150 g Peanut butter(smooth)
- 3 tbsp Vegetable oil
- 500 ml Water
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground)
- 1 tsp Coriander powder
👨🍳 Instructions
- 1
Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the wild boar cubes on all sides. Remove meat and set aside.
- 2
Add chopped onions to the pot and sauté until softened, about 5-7 minutes.
- 3
Stir in minced garlic, grated ginger, and chopped scotch bonnet pepper (if using). Cook for 1 minute until fragrant.
- 4
Add chopped tomatoes and cook until they break down, about 5-8 minutes.
- 5
Return the wild boar meat to the pot. Add water, salt, black pepper, and coriander powder. Bring to a boil, then reduce heat, cover, and simmer for 1.5 hours, or until the meat is tender.
- 6
Add the cubed sweet potatoes and chopped cassava leaves to the pot. Stir well.
- 7
In a small bowl, whisk the peanut butter with a little hot water from the stew to create a smooth paste. Stir this paste into the stew.
- 8
Continue to simmer, uncovered, for another 30 minutes, or until the sweet potatoes are cooked and the stew has thickened. Adjust seasoning if needed.
- 9
Serve hot, traditionally with ugali or rice.
💡 Pro Tips
- ✓Wild boar can be tougher than domestic pork, so ensure adequate simmering time for tenderness.
- ✓If cassava leaves are unavailable, spinach or kale can be used as a substitute, though the flavor will differ.
- ✓Adjust the amount of scotch bonnet pepper according to your spice preference.
🔄 Variations
- Add other root vegetables like carrots or Irish potatoes.
- Incorporate a bay leaf during the simmering process for added aroma.
