  • 1 kg Wild boar meat(cut into 2-inch cubes)
  • 2 large Onions(chopped)
  • 4 medium Tomatoes(chopped)
  • 6 cloves Garlic(minced)
  • 1 inch Ginger(grated)
  • 1 small Scotch bonnet pepper(finely chopped (optional, for heat))
  • 2 medium Sweet potatoes(peeled and cubed)
  • 500 g Cassava leaves(fresh or frozen, chopped)
  • 150 g Peanut butter(smooth)
  • 3 tbsp Vegetable oil
  • 500 ml Water
  • 1 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(freshly ground)
  • 1 tsp Coriander powder

    Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the wild boar cubes on all sides. Remove meat and set aside.

    Add chopped onions to the pot and sauté until softened, about 5-7 minutes.

    Stir in minced garlic, grated ginger, and chopped scotch bonnet pepper (if using). Cook for 1 minute until fragrant.

    Add chopped tomatoes and cook until they break down, about 5-8 minutes.

    Return the wild boar meat to the pot. Add water, salt, black pepper, and coriander powder. Bring to a boil, then reduce heat, cover, and simmer for 1.5 hours, or until the meat is tender.

    In a small bowl, whisk the peanut butter with a little hot water from the stew to create a smooth paste. Stir this paste into the stew.
