Krumkake with Cloudberry Cream
Krumkake are thin, crisp, cone-shaped Norwegian cookies, traditionally made in a special iron. They are often filled with a whipped cream, often flavored with cloudberries, a tart, golden berry native to Norway.

๐ง Ingredients
- 1 cup Butter(softened)
- 1 cup Granulated sugar
- 2 large Eggs
- 1 tsp Cardamom(ground)
- 2 cups All-purpose flour
- 1 cup Heavy cream
- 1/2 cup Cloudberry jam(or fresh cloudberries, pureed)
๐จโ๐ณ Instructions
- 1
Cream together the softened butter and granulated sugar until light and fluffy.
- 2
Beat in the eggs one at a time, then stir in the ground cardamom.
- 3
Gradually add the all-purpose flour, mixing until just combined. The dough will be soft.
- 4
Heat a krumkake iron according to manufacturer's instructions. Lightly grease if necessary.
- 5
Spoon about 1-2 tablespoons of dough onto the center of the hot iron and spread thinly. Close the iron and cook for about 1 minute, or until golden brown.
- 6
Carefully remove the krumkake from the iron and immediately shape it into a cone using a krumkake roller or by hand. Be careful, as it will be hot.
- 7
Let the krumkake cool completely on a wire rack.
- 8
In a separate bowl, whip the heavy cream until stiff peaks form.
- 9
Gently fold in the cloudberry jam or puree until just combined.
- 10
Fill the cooled krumkake cones with the cloudberry cream just before serving.
๐ก Pro Tips
- โWork quickly when shaping the krumkake, as they harden fast.
- โIf you don't have a krumkake iron, you can try making thin pizzelles and shaping them.
- โCloudberries can be tart; adjust the sugar in the cream filling to your preference.
