  • 3 tbsp Olive oil
  • 1 medium Onion(finely chopped)
  • 4 cloves Garlic(minced)
  • 1 medium Red bell pepper(diced)
  • 1 medium Tomato(diced)
  • 1 cup White wine
  • 4 cups Fish or seafood stock
  • 1 tsp Smoked paprika
  • 1 tsp Ground cumin
  • 0.5 tsp Chili flakes(optional)
  • 1 medium Potato(peeled and diced)
  • 0.5 cup Fresh cilantro(chopped, plus more for garnish)

    Prepare the seafood: clean mussels and clams, devein shrimp, and cut fish fillets into chunks. Keep refrigerated.
