Paneer Tikka
A classic Indian vegetarian appetizer featuring cubes of paneer (Indian cottage cheese) and colorful vegetables marinated in a rich, spiced yogurt mixture and then grilled or baked until tender with beautifully charred edges. It's a delightful balance of smoky, tangy, and savory flavors.
🧂 Ingredients
- 400 g Paneer(Cut into 1-inch cubes. Look for firm paneer that holds its shape.)
- 200 g Thick Yogurt(Full-fat, plain yogurt is best. Strain it if it's too watery.)
- 2 tbsp Tikka Masala Spice Blend(Alternatively, use a mix of garam masala, coriander powder, cumin powder, turmeric, chili powder, and ginger-garlic paste.)
- 2 medium Bell Peppers(Assorted colors (e.g., red, green, yellow), deseeded and cut into 1-inch pieces.)
- 1 large Red Onion(Cut into 1-inch pieces, with layers separated.)
- 2 tbsp Lemon Juice(Freshly squeezed is preferred.)
- 2 tbsp Mustard Oil(Or any neutral oil. Warming mustard oil slightly can mellow its pungency.)
- to taste Salt
- 1-2 tbsp Butter or Ghee(For basting during cooking (optional).)
👨🍳 Instructions
- 1
Prepare the marinade: In a large bowl, combine the thick yogurt, tikka masala spice blend, lemon juice, mustard oil, and salt. Whisk until smooth and well combined. The marinade should be thick enough to coat the ingredients.
⏱️ 5 minutes - 2
Marinate the paneer and vegetables: Add the paneer cubes, bell pepper pieces, and onion pieces to the marinade. Gently toss to ensure everything is evenly coated. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
⏱️ 2 hours (minimum) - 3
Assemble the skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated paneer and vegetable pieces onto the skewers, alternating them for visual appeal and even cooking. Leave a small space between pieces.
⏱️ 10 minutes - 4
Preheat your cooking apparatus: For grilling, preheat your outdoor grill or indoor grill pan to medium-high heat (around 200-220°C / 400-425°F). For baking, preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
⏱️ 10 minutes - 5
Cook the paneer tikka: Place the skewers on the preheated grill or baking sheet. Grill or bake for 12-15 minutes, turning occasionally, until the paneer is golden brown and slightly charred, and the vegetables are tender-crisp. If desired, brush with melted butter or ghee during the last few minutes of cooking for extra richness and shine.
⏱️ 12-15 minutes - 6
Serve: Carefully remove the skewers from the heat. Serve the paneer tikka hot, garnished with fresh cilantro or mint, and accompanied by onion rings and mint chutney or a side salad.
💡 Pro Tips
- ✓For best flavor, marinate the paneer and vegetables overnight.
- ✓Ensure your grill or oven is sufficiently hot to achieve a good char. High heat is key for authentic tandoori-style results.
- ✓Don't overcrowd the skewers; this allows for better heat circulation and even cooking.
- ✓Basting with butter or ghee towards the end of cooking adds a lovely sheen and flavor.
🔄 Variations
- Achari Paneer Tikka: Add a tablespoon of mixed pickle (achar) masala to the marinade.
- Malai Paneer Tikka: Replace some of the yogurt with heavy cream or malai for a richer, creamier texture.
- Add other vegetables like cherry tomatoes, mushrooms, or cauliflower florets.
