Pannonian Fish Soup

- 500 g Mixed fish fillets(e.g., carp, catfish, pike perch, eel)
- 1 medium Large onion(finely chopped)
- 100 g Streaky bacon(diced)
- 2 medium Bell peppers(mixed colors, cut into strips)
- 1 small Chilli pepper(optional, finely chopped)
- 1 clove Garlic(minced)
- 3 tbsp Tomato purée
- 1 tbsp Sweet paprika
- 0.5 tsp Hot paprika(or to taste)
- 1 l Fish stock or vegetable broth

- 2 tbsp Clarified butter or oil
- for garnish Sour cream or whipped cream

Debone the fish fillets and cut them into bite-sized pieces. Set aside.

In a large soup pot, heat the clarified butter or oil over medium heat. Add the chopped onion and diced bacon and sauté until the onion is translucent and the bacon is lightly rendered.

Add the bell pepper strips, chopped chili pepper (if using), and minced garlic to the pot. Cook for another 5 minutes until the peppers begin to soften.

Stir in the tomato purée, sweet paprika, and hot paprika. Cook for 1 minute, stirring constantly, until fragrant.
