  • 1 kg Potatoes(peeled and cut into large cubes)
  • 1 medium Onion(finely chopped)
  • 4 cloves Garlic(minced)
  • 2 tbsp Achiote paste (annatto)
  • 1 tsp Cumin
  • 1 tsp Oregano
  • to taste Salt
  • to taste Black pepper
  • 4 cups Water or broth
  • 1/4 cup Cilantro(chopped, for garnish)

    In a large pot, sauté the chopped onion and minced garlic in a little oil until softened.
