A unique and aromatic dish where fresh fish is seasoned and steamed inside banana leaves, infusing it with a subtle sweetness and moisture. This method results in incredibly tender and flavorful fish.

🧂 Ingredients
- 4 pieces White fish fillets(e.g., tilapia, cod, or sea bass, about 150-200g each)
- 4 large Banana leaves(wilted or softened over heat to make pliable)
- 1 medium Onion(thinly sliced)
- 2 medium Tomatoes(thinly sliced)
- 2 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 2 tbsp Lemon juice
- 2 tbsp Olive oil
- 2 tbsp Coriander(chopped)
- to taste Salt
- to taste Black pepper
- 1/2 tsp Chili flakes(optional)
👨🍳 Instructions
- 1
Prepare the banana leaves by gently passing them over a low flame or dipping them in hot water to make them pliable and prevent tearing. Pat them dry.
- 2
In a small bowl, mix minced garlic, grated ginger, lemon juice, olive oil, chopped coriander, salt, pepper, and chili flakes (if using).
- 3
Place a banana leaf flat. Layer some sliced onions and tomatoes in the center.
- 4
Place a fish fillet on top of the vegetables. Spoon some of the garlic-ginger mixture over the fish.
- 5
Top with more sliced onions and tomatoes.
- 6
Carefully wrap the banana leaf around the fish and vegetables to create a sealed parcel. Secure with kitchen twine if necessary.
- 7
Repeat with the remaining fish fillets and banana leaves.
- 8
You can cook the parcels in several ways: steam them for 30-40 minutes, bake them in a preheated oven at 180°C (350°F) for 30-40 minutes, or grill them over medium heat for about 15-20 minutes per side, turning once.
- 9
Carefully unwrap the parcels and serve the fish immediately, with the juices and steamed vegetables.
💡 Pro Tips
- ✓Ensure the banana leaves are completely sealed to prevent moisture loss.
- ✓Adjust the amount of garlic, ginger, and chili to your preference.
- ✓This method is excellent for preserving the natural moisture and flavor of the fish.
🔄 Variations
- Add other aromatics like lemongrass or lime leaves inside the parcel.
