Petulla me Mjaltë - Albania traditional dish

🧂 Ingredients

  • 300 g All-purpose flour
  • 150 ml Yogurt
  • 1 large Egg
  • 1 tbsp Sugar
  • 1 tsp Baking powder
  • 0.5 tsp Salt
  • for frying Vegetable oil
  • for drizzling Honey

👨‍🍳 Instructions

  1. 1

In a bowl, whisk together the flour, sugar, baking powder, and salt.

  2. 2

In a separate bowl, whisk the egg and yogurt until well combined.

  3. 3

Pour the wet ingredients into the dry ingredients and mix until a smooth, thick batter forms. Do not overmix.

  4. 4

Heat about 2-3 inches of vegetable oil in a deep pan or pot over medium heat to around 175°C (350°F).

  5. 5

Carefully drop spoonfuls of batter into the hot oil, being careful not to overcrowd the pan. Fry for 2-3 minutes per side, until golden brown and puffed up.

  6. 6

Remove the petulla with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

  7. 7

Serve warm, generously drizzled with honey.

💡 Pro Tips

  • Ensure the oil is at the correct temperature; too hot and they'll burn outside before cooking inside, too cool and they'll be greasy.
  • The batter should be thick but pourable. Adjust flour or yogurt slightly if needed.
  • For a slightly different flavor, you can add a pinch of cinnamon to the batter.

🔄 Variations

  • Some recipes include a small amount of grated lemon zest in the batter for a citrus note.
  • Serve with a dusting of powdered sugar instead of honey.
  • For a savory version, omit the sugar and add herbs like parsley or dill.
