A fragrant and flavorful rice dish cooked with tender pieces of meat (beef or lamb), aromatic spices, and often served as a celebratory meal. It's a staple in Tanzanian cuisine, particularly along the coast and in Zanzibar.

- 500 g Beef or Lamb(cubed into 1-inch pieces)
- 2 cups Basmati Rice(rinsed and drained)
- 2 medium Onions(finely chopped)
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 2 medium Tomatoes(chopped)
- 3.5 cups Beef Broth or Water
- 3 tbsp Vegetable Oil
- 1 tsp Whole Cumin Seeds
- 1 tsp Whole Coriander Seeds
- 4 pods Cardamom Pods
- 3 whole Cloves
- 1 inch piece Cinnamon Stick
- 1/2 tsp Turmeric Powder

- 1/4 cup Fresh Cilantro(chopped, for garnish)

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add cumin seeds, coriander seeds, cardamom pods, cloves, and cinnamon stick. Sauté for about 1 minute until fragrant.
