- 1.5 kg Chicken pieces (thighs and drumsticks)
- 500 g Potatoes(peeled and cut into chunks)
- 2 medium Carrots(peeled and sliced)
- 1 large Onion(chopped)
- 4 cloves Garlic(minced)
- 1 large Bell pepper (any color)(chopped)
- 2 medium Tomatoes(chopped)
- 1 medium Zucchini(sliced)
- 4 tbsp Olive oil
- 250 ml Chicken broth or water
- 1.5 tsp Salt(or to taste)
- 1 tsp Black pepper(or to taste)
- 1 tsp Sweet paprika
- 1 tsp Dried oregano
- 1 tsp Dried thyme
- 0.5 cup Black olives(optional)

Preheat oven to 180°C (350°F).

In a large bowl, combine chicken pieces with olive oil, salt, pepper, sweet paprika, oregano, and thyme. Mix well to coat the chicken evenly. Let it marinate for at least 15-20 minutes at room temperature, or longer in the refrigerator.
